The main objective is to offer new flavors that attract consumers, using fruits such as uva de monte, pomarrosa, and chonta. As an innovative proposal, biodegradable packaging will be used and fruits that are usually not found in the highland region, promoting the commercialization of these fruits, thus contributing to the sustainable development of the region. To get a clear idea of the costs in the manufacture of ice cream, a commercial and financial study was conducted, investigating the supply and demand of these new products. Through the application of surveys, quantitative data were obtained, measuring the preferences and tastes of potential consumers, with 96.1% of respondents willing to consume flavors different from the traditional ones. The financial study allows the company to know the monetary values involved in the manufacture, summarized in a cost sheet to obtain the unit value of the ice cream estimated at $0.75 per 150g unit. The financial indicators were positive, with a net present value (NPV) of $4,350.70 and an internal rate of return (IRR) of 23%, confirming the feasibility of creating a company dedicated to the production of ice cream with Amazonian fruits.
