    Desarrollo de una bebida a base de Mashua amarilla (Tropaeolum tuberosum) saborizada con maracuyá (Passiflora edulis Sims).

    The objective of this research project is to develop a drink based on yellow mashua “Tropaeolum tuberosum” flavored with passion fruit “Passiflora edulis Sims”. The adopted methodology included the characterization of the raw material yellow mashua with 8.18% protein, 6.24% fiber and 0.62% fat and passion fruit with 0.74% protein, 0.28% fiber and 0.55% fat. The appropriate formulation was established by applying a completely randomized block design (CRBD) in factorial arrangement (23) with two repetitions, where different proportions of mashua, water, passion fruit, type of sweetener and stabilizer were evaluated. To determine the best treatment, a sensory analysis was evaluated where untrained tasters from the agroindustrial career participated, higher cycles of the Technical University of Cotopaxi with the following parameters color, smell, flavor, consistency and acceptability, in addition to physical-chemical parameters such as pH, acidity, soluble solids and osmolality, subsequently the best treatment was determined being this t1 which consists of proportions of mashua, water, passion fruit (1: 6: 1) + Sugar + stabilizer thus obtaining the drink, later for its nutritional analysis with results of humidity 92.57%, total solids 7.43%, protein 0.5%, fiber 0.19%, fat 0.27%, ash 0.15%, carbohydrates 6.32%, likewise a carotenoid analysis with 0.16 mg where its physical-chemical parameters resulted in a pH 4.40, titratable acidity 0.35%, ºBrix 13.55, and the microbiological properties were also analyzed with the following results: total coliforms absence <1, mesophilic aerobes <10 and molds absence <10, complying with the parameters required by the NTE INEN 2304, NTC 3837, NTC 3549 regulations. Therefore, the drink based on yellow mashua flavored with passion fruit is suitable for human consumption. Likewise, the retail price of 0.45 ctv was established with a net content of 200 ml.
